Meatloaf with Spanish Rice and Broccoli

 

We’ve been on a meatloaf kick of late and boy is it good. Nothing says fall like a hearty home cooked meal. For instructions on the meatloaf check out my earlier post here. Broccoli served in this dish was steamed in the microwave, nothing fancy about that... The big to-do is the rice, which is simple, full of flavor, and easy.




For the rice we will need the following ingredients:

  1. •1 1/2 Cups Rice

  2. •2 Cups Chicken Broth

  3. •1 10oz Can Tomato Sauce

  4. •1 Yellow Onion (Find Diced)

  5. •4 Cloves Garlic (Minced)

  6. •Olive Oil

  7. •Salt & Pepper


Procedure:

Bring your large frying pan to medium high heat and add two table spoons of olive oil. When hot add the onions and garlic - cook until soft, glassy, and slightly browned.




Add the rice and pan fry until slightly toasted, stirring constantly.




Add the Chicken broth and tomato sauce, salt and pepper to taste. Reduce heat and simmer for 20 minutes covered.




After 20 minutes, check the fluid level, add 1/2 cup of water if necessary. Simmer another 10 minutes.




Fluff and serve.
